What it's like
The first glass of the day, the way it's poured at a Levantine breakfast. Strong black tea, opened up by whole cardamom, cinnamon bark and a little clove. Steep it four to five minutes and it comes out deep amber and fragrant enough to fill the kitchen. It has the caffeine of an ordinary cup of black tea: enough to start the morning without the jolt of coffee. Drink it plain, with a spoon of sugar the way many families do, or with a splash of milk. It's at its best next to warm bread, olive oil and za'atar.
