How to make Arabic cardamom tea, from the Taboon & Tea journal

Across the Arab world, cardamom tea — shai bil hail — is the glass that's already poured before a guest has finished saying hello. It is strong black tea, sweetened or not, with the unmistakable smell of cardamom rising off the glass. It takes ten minutes and a handful of ingredients. The one thing that decides whether it tastes right is the cardamom itself.

Why whole pods matter

Cardamom's smell lives in oils sealed inside the pod. Once the seeds are ground, those oils start to fade, which is why pre-ground "chai" mixes so often smell of very little. Crack the pods just before they go in the pot — press them with the flat of a knife until the green shell splits — and the tea smells the way you remember.

What you need (two to three small glasses)

  • 2 cups of water
  • 2 teaspoons of loose black tea, or 2 black tea bags
  • 4–5 green cardamom pods, lightly cracked
  • Sugar to taste (optional — many families add it in the pot)
  • Optional: a small piece of cinnamon bark or one clove

Method

  1. Bring the water to a boil with the cracked cardamom (and cinnamon or clove, if using). Let it simmer for two to three minutes so the spice has time to open.
  2. Take the pot off the heat, add the tea, cover and leave it for four to five minutes. Black tea goes bitter if it keeps boiling, so the tea goes in off the heat.
  3. Add sugar now if you're sweetening it, and stir until it dissolves.
  4. Strain into small glasses. Serve it as it is — no milk — next to bread, olive oil and za'atar, or with something sweet in the afternoon.

Doing it with tea bags

Our Good Morning blend, Sabah Al Khair, is this tea already put together: whole-leaf black tea with whole cardamom, cinnamon bark and clove, blended in small batches. Pour water just off the boil over two bags in a small pot or one bag in a glass, wait four to five minutes, and you're done.

Small things that make it better

  • Use glasses, not mugs. The colour is half the pleasure.
  • Make it a little stronger than you think — it's meant to be drunk in small amounts.
  • Pour a second round. Nobody at the table expects only one.
